This is not at all a fancy dish, but to me it’s simply wonderful! This dish has an authentic taste of eggplant, which combines really well with the sautéed spring onion sauce. A little sweet, a little salty with a slight smell of garlic, your fist bite should into the soft texture if the vegetable should melt! (Writing this has made me hungry again!).
Traditionally, in Vietnam people would grill the eggplant over charcoal (it’s the only way my grandma would still cook it). But, do feel free to like me use the over grill!
