A firm family favourite, this dish is my ultimate comfort food when it comes to Vietnamese cooking. The rich flavours of this great dish make it perfect for summer or winter, it really doesn’t matter. Or maybe that’s just because I love it so much!
What I enjoy most is the silence at the dinner table when we have this dish, full concentration on the pleasure of having the soft tender pork melt in your mouth, overflowing with the sweet juices of coconut water. Something that’s always guaranteed to make the chef smile!
Traditionally, this is a new year’s dish. For the farmers living in the countryside, it was only prepared once a year for the special occasion as meat was very expensive and hard to get.
Every Tet (Vietnamese New Year) my mother still follows this tradition and serves this dish to the family (amognst many others). However, I still try not to have it too often… Nowadays it’s because I’m not a fan of the gym though!
