These Shrimps have been sun dried and shrunk to a thumbnail size. They are used in many Asian cuisines, imparting a unique umami taste. A handful of shrimp is generally used for Vietnamese cooking, where the flavours of this ingredient are released when allowed to simmer. However, often it is eaten as a snack whilst drinking beer (as we do with roasted peanuts here!)
Personally I am a fan, and could chew on these all day long with pickles! Growing up in Vietnam, our neighbours would farm the shrimps and dried them as a family business. I used to love seeing the thousands drying in their front yard, the redness is truly gorgeous!
